This coffee comes from Daye Bensa Coffee, a highly respected producer and exporter operating in the highlands of Bensa within Ethiopia’s renowned Sidama region. The surrounding mountains rise to extraordinary elevations of around 2,200 MASL, where cool temperatures, misty mornings, and nutrient-rich soils allow cherries to mature slowly and develop exceptional aromatic complexity.

Daye Bensa works closely with local growers and washing stations, emphasizing meticulous cherry selection, careful drying on raised African beds, and lot separation to highlight the distinctive floral character that Sidama coffees are famous for.


Coffee Overview (Optimised for Filter Brewing)

Produced from the Ethiopian cultivar 74158, this high-elevation natural lot is crafted to showcase clarity, floral aromatics, and tea-like elegance rather than heavy fruit intensity. The altitude and slow drying conditions help preserve delicate volatile compounds, making this coffee especially well suited for pour-over, batch brew, and other filter methods where nuance and fragrance can fully open.

Processing Method — Natural

Fully ripe cherries are hand-sorted and dried whole on raised beds under carefully controlled conditions. During drying, the fruit sugars gradually infuse the beans, building gentle sweetness while maintaining the region’s hallmark floral structure.

The slow, high-altitude drying environment allows the coffee to develop:

  • pronounced floral aromatics

  • silky texture

  • preserved clarity rather than fermentation heaviness
