Las Palmas Farm, managed by Brayan Alvear in the hills of Huila, Colombia, is dedicated to producing distinctive specialty coffees through precision farming and experimental processing. The farm’s elevation of 1,400–1,600 masl creates an environment where coffee cherries mature gradually, concentrating sugars and developing dense, flavorful beans.

This coffee is produced from a blend of Castillo, Caturra, and Colombia varieties — cultivars well known for their sweetness, balance, and adaptability to advanced fermentation styles. Processing Method — Fruit Co-Fermentation
For this lot, freshly harvested ripe cherries undergo an extended co-fermentation process with fruit in temperature-controlled tanks. During fermentation, the interaction between the fruit sugars, yeast activity, and coffee mucilage helps create intense aromatic complexity and enhanced sweetness.
Once fermentation is complete, the coffee is slowly dried to ensure stability and preserve the delicate balance between fruit intensity and cup cleanliness. The result is a highly aromatic coffee with layered sweetness, creamy texture, and candy-like fruit character.
