Farm Description
This coffee comes from Brayan Alvear at Las Palmas Farm, located in the renowned coffee-growing region of Huila, Colombia. The farm sits between 1,400–1,600 meters above sea level, where the combination of fertile soils, consistent rainfall, and warm daytime temperatures followed by cool mountain nights allows coffee cherries to ripen slowly and develop high natural sugars.
Las Palmas focuses on careful cherry selection and small-lot production, combining traditional Colombian cultivation with modern experimental processing. This attention to detail helps produce coffees with both strong regional character and distinctive, innovation-driven flavor profiles.
Coffee Overview
This lot is produced from a blend of Castillo, Caturra, and Colombia varieties, selected for their balance of productivity, disease resistance, and cup quality. Together, these varieties create a structured base that responds exceptionally well to advanced fermentation techniques, allowing fruit-driven flavors to shine while maintaining clarity and sweetness.
Colombia Raspberry is designed as a modern specialty microlot — expressive, fruit-forward, and crafted for drinkers who enjoy vibrant, experimental coffees.
Processing Method — Fruit Co-Fermentation
After harvest, only fully ripe cherries are selected and prepared for a controlled co-fermentation with fruit. During this stage, the coffee cherries ferment in a sealed, monitored environment alongside fruit additions, allowing aromatic compounds and sugars to influence the mucilage and enhance complexity.
This method intensifies red-fruit characteristics, boosts perceived sweetness, and builds a fuller body. Following fermentation, the coffee is slowly dried under carefully controlled conditions to stabilize the profile and preserve both cleanliness and aromatic intensity.
Cup Profile
The resulting cup is rich, juicy, and dessert-like.
Expect a vibrant opening of fresh raspberry, layered with the deep sweetness of dark cherry and rounded by a smooth, syrupy molasses finish. The acidity is bright yet balanced, the body is velvety, and the aftertaste lingers with sweet red-fruit depth.
