Farm Description

Las Palmas Farm, led by Brayan Alvear in Acevedo, Huila, is positioned in one of Colombia’s most dynamic coffee-growing zones. At 1,400–1,600 meters above sea level, the farm benefits from a unique combination of altitude, volcanic soils, and a stable climate that allows cherries to develop slowly and evenly.

Brayan’s approach emphasizes precision agriculture and experimental processing. Each harvest is carefully sorted at peak ripeness, with micro-lots separated to highlight distinct flavor expressions. This attention to detail, combined with Huila’s naturally expressive terroir, results in coffees that are both refined and highly aromatic.


Coffee Overview

This lot is composed of Castillo, Caturra, and Colombia varieties, selected for their ability to balance structure, sweetness, and clarity. While these cultivars are traditionally known for clean and reliable cup profiles, they become highly expressive when paired with controlled fermentation techniques.

In this iteration, the focus is on a floral and stone-fruit-driven profile — designed to showcase elegance, aromatics, and a tea-like delicacy rather than heavy sweetness or intensity.


Processing Method — Fruit Co-Fermentation

After selective hand-picking, only fully ripe cherries are introduced into a carefully managed co-fermentation environment with fruit additions. This controlled fermentation allows subtle aromatic compounds to integrate into the coffee mucilage, shaping a more perfumed and fruit-forward profile.

Temperature, time, and oxygen exposure are closely monitored to preserve clarity while enhancing floral and stone-fruit complexity. Once fermentation is complete, the coffee is slowly dried under shaded conditions to lock in aromatics and maintain a clean, refined cup structure.


Cup Profile

This coffee presents a delicate, perfumed, and highly aromatic cup experience.

It opens with fragrant lychee, offering a soft tropical sweetness and floral lift. As the cup develops, elegant rose water notes emerge, adding a silky, perfumed character that enhances complexity. The finish is defined by juicy white peach, bringing a clean, stone-fruit brightness and a refreshing, tea-like sweetness.

The overall structure is light, silky, and refined, with vibrant aromatics, gentle acidity, and a lingering floral-fruit finish that feels clean and expressive.
