Farm Description
Finca El Gabiado is nestled in the fertile slopes of the Ilamatepec Mountain Range in western El Salvador, an area famed for producing some of the country’s finest coffees. At altitudes between 1,330–1,500 MASL, the farm enjoys nutrient-rich volcanic soils, mild temperatures, and steady rainfall—ideal conditions for cultivating high-quality Arabica.
Owned and managed by the Alfaro Family, the farm is dedicated to preserving El Salvador’s traditional Bourbon variety while embracing innovative post-harvest practices. Generational knowledge, combined with a forward-looking approach to processing, ensures coffees that are both true to their origin and elevated in complexity.

Processing Method
Anaerobic – Handpicked ripe cherries are placed in sealed, oxygen-free tanks for controlled fermentation. This process enhances fruity and wine-like notes, boosting acidity and aromatics while maintaining a smooth, chocolatey backbone. After fermentation, the cherries are carefully dried, preserving sweetness and clarity.
