Farm Description
Finca El Carmen is a fourth-generation family estate located in the lush hills of Apaneca, part of the famed Apaneca-Ilamatepec mountain range in western El Salvador. Owned and managed by Fernando Alfaro and his family, the farm sits at an altitude of 1,300 meters above sea level, where the cool climate, volcanic soils, and consistent rainfall create ideal conditions for growing high-quality Arabica.
The farm is dedicated to the cultivation of Bourbon, one of the country’s most traditional and well-loved coffee varieties. Over the years, the Alfaro family has combined generational knowledge with modern post-harvest techniques to enhance quality, traceability, and sustainability. Their commitment to both people and the environment is reflected in every step—from careful cherry selection to meticulous processing.
Coffee Overview
This naturally processed Bourbon from Finca El Carmen showcases the classic, comforting profile of El Salvador’s finest coffees. Grown in nutrient-rich volcanic soil and dried under the sun, the cup is balanced, sweet, and structured—an excellent everyday coffee with elegant depth.
Processing Method
Natural – Ripe cherries are handpicked and dried whole on raised beds or patios under the sun. This slow, careful drying process allows sugars and fruit characteristics to develop inside the bean, resulting in a fuller-bodied coffee with pronounced sweetness and low acidity.
Cup Profile
Chocolate · Walnut · Prune
A warm, mellow cup with smooth milk chocolate, toasted walnut, and a hint of dried fruit richness like prune. Medium-bodied and round, it finishes clean and soft—an easy-drinking yet flavorful coffee that highlights the skill of its producers and the beauty of its origin.
