At Las Palmas Farm in Acevedo, Huila, producer Brayan Alvear continues to redefine the possibilities of Colombian coffee. Situated at 1,400–1,600 MASL, the farm thrives in fertile volcanic soils and a cool Andean climate, ideal for cultivating Castillo, Caturra, and Colombia varieties. Brayan is recognized for his bold experimentation with co-fermentation, producing coffees that are as vibrant and expressive as the region itself.
Coffee Overview
The Sweet Melon lot is a refreshing showcase of Brayan’s innovative style. By co-fermenting coffee cherries with fresh melons and other fruits, he has created a cup that bursts with crisp sweetness and delicate stone fruit notes, balancing playfulness with refinement.
Processing Method
Co-Fermented with Fruits – Ripe cherries are sealed in anaerobic tanks along with melon and complementary fruits. During fermentation, the sugars and aromas from the fruit integrate with the coffee, enhancing sweetness and amplifying the tropical and delicate notes. After fermentation, the coffee is slowly dried to maintain clarity and balance.
