Farm Description
This Pink Guava lot comes from the highlands of Acevedo, Huila, produced by Aroma Nativo, a group dedicated to showcasing the diversity and innovation of Colombian specialty coffee. At elevations between 1,600–1,750 MASL, the region offers fertile volcanic soils, consistent rainfall, and cool nights—conditions that are ideal for slow cherry maturation and complex flavor development.
The focus here is on Pink Bourbon, a highly prized variety known for its vibrant fruit character, floral aromatics, and refined sweetness. Through careful farming and experimental processing, Aroma Nativo captures the variety’s elegance in every cup.
Coffee Overview
This lot highlights the expressive potential of Pink Bourbon when paired with creative processing. With honey double fermentation, the coffee develops tropical depth, citrus brightness, and floral lift, resulting in a cup that is both exotic and harmonious.
Processing Method
Honey Double Fermentation – Ripe Pink Bourbon cherries are first fermented in sealed tanks, then pulped and fermented a second time with mucilage intact. After fermentation, the coffee is dried using the honey process, which preserves sugars and enhances sweetness. The result is a clean yet fruit-forward profile with layers of tropical and floral complexity.
