Farm Description
Produced at Las Palmas Farm in Acevedo, Huila, this coffee comes from Brayan Alvear, a young Colombian farmer known for his innovative approach to post-harvest processing. At 1,400–1,600 MASL, the farm benefits from fertile volcanic soils and a cool Andean climate, ideal for growing Castillo, Caturra, and Colombia varieties. Brayan’s dedication to experimentation has positioned him at the forefront of Colombia’s new wave of specialty coffee.
Coffee Overview
This lot, called Pineapple, highlights Brayan’s adventurous use of co-fermentation with fruits, a method that accentuates tropical sweetness and adds playful complexity to the cup. The result is a vibrant, fruit-driven coffee that feels both refreshing and indulgent.
Processing Method
Co-Fermented with Fruits – Fresh coffee cherries are sealed in fermentation tanks along with pineapple and other tropical fruits. During fermentation, the natural sugars and aromatics infuse into the coffee, enhancing sweetness and creating a candy-like tropical profile. After fermentation, the cherries are carefully dried to maintain clarity and balance.
