At Las Palmas Farm in Acevedo, Huila, producer Brayan Alvear continues to push the boundaries of Colombian coffee innovation. Situated at 1,400–1,600 MASL, the farm benefits from rich volcanic soils and a cool Andean climate that helps develop sweetness and complexity in the beans. With a focus on Castillo, Caturra, and Colombia varieties, Brayan has earned recognition for his pioneering work in fruit co-fermentation, producing coffees that are expressive, vibrant, and unforgettable.

The Honey Peach lot embodies Brayan’s philosophy of merging terroir with innovation. Through co-fermentation with fruits, this coffee brings out a layered sweetness and stone fruit brightness, resulting in a cup that feels both indulgent and refreshing.
Processing Method
Co-Fermented with Fruits – Ripe cherries are sealed in tanks along with peaches and other natural fruits to undergo a controlled anaerobic fermentation. This process enhances the coffee’s inherent sugars while infusing it with fruit-forward aromatics. The beans are then carefully dried to preserve balance and depth.
